Why should you buy a blast chiller?

Read Time:2 Minute, 27 Second

A blast chiller is colloquially known as a ‘blast chiller’. Nowadays, many people involved in catering are thinking about or planning to buy one. Those who have already purchased the increasingly popular ‘blast chiller’ will probably never regret their choice. Why?

This refrigeration appliance is prized for a number of reasons. One is that it allows you to reduce the temperature of any dish very quickly, compared to other refrigerators. In addition, this can be done immediately after it has been prepared.

Many high-quality blast chillers have a freezing function. Some such units are capable of lowering the temperature of a dish from +70C to -18C in just 240 minutes. This type of blast chiller is a great idea and will work well in many catering establishments or catering companies.

How does a blast chiller work?

First of all, the blast chiller works at a very fast pace. This enables there to be no loss of firmness or flavour of the food once it has defrosted. With other chilling or freezing appliances, this is usually not the case.

This has a great deal to do with the size of the ice crystals in the prepared food. Namely, the formation of large crystals when lowering the temperature of a dish damages its structure. On the other hand, it loses much of its juices during thawing. If the crystals are smaller, the food retains its original properties as well as its taste and aroma. This is what the blast chiller enables.

Why is it worth investing in a blast chiller?

“Blast chiller” provides comfort and convenience in a catering establishment. A perfect example of this is the ability to freeze seasonal fruit. Usually their shelf life is unfortunately a very short period. Especially if they are stored without a blast chiller. If you invest in one, you can be sure that your stored seasonal fruit will not change its texture, taste or smell, even after it has been defrosted. Your customers will appreciate this. The same goes for the food on your menu. They too will retain their flavour, aroma and texture, even after long periods in the blast chiller.

The blast chiller and a better hygiene level in your premises

Using a blast chiller in your restaurant will certainly help you to meet the stringent hygiene regulations for catering establishments. It should be noted that lowering the temperature of foodstuffs in a very short time effectively prevents the growth of pathogenic microorganisms. When chilling food in standard appliances, this process usually takes many hours. And when you use a blast chiller, it takes much less time to chill food, preventing the growth of a wide variety of dangerous bacteria.

Every catering establishment needs modern technological solutions. This streamlines its work and takes food preparation to a higher level. A good example of this is the excellent properties of the blast chiller. We believe that you, too, will opt for one soon.
